• Stewart's Skirt Steak

    Amazing taste - cut against the grain - add white rice and black beans!

    Skirt Steak:

    1/2 Cup Soy Sauce

    1/3 Cup Olive Oil

    3 TBS Brown Sugar

    1/2 tsp Red Pepper Flakes

    2-3 Garlic Cloves

    3 Scallions or 2 Shallots

    Good squeeze of Lime juice

     

    Chop up all ingredients and place in blender. Blend until smooth.

     

    Put skirt steak in marinade in ziplock back. Refrigerate as long as possible. Every hour or so, flip bag.

     

    Return to room temperature before grilling.

     

    Black Beans:

    1/2 Cup chopped Spanish Onion

    1 Chopped Garlic clove

    1/2 Cup green pepper, chopped fine

    Goya Black Beans

     

    Saute onion in olive oil. Add in garlic and a splash of balsamic vinegar. Add can of goya beans. Add one bay leaf.
